Akashi Variety: Akashi means "light" in Japanese, evoking the brilliant light green color of this tea. This variety has a perfect balance, with sweet and fruity notes, and rich in umami.
Origin and production: It comes from Japan, from an area called Kagoshima, on the southern island of Kyushu, is famous for its lush vegetation and unspoiled nature. The warm, humid climate provides the best conditions for tea growth, a fact reflected in its flavor. The volcanic island boasts nutrient-rich soil, as the ash from no fewer than eleven active volcanoes continues to provide the valuable minerals that aid the growth of these precious plants.
The young leaves are harvested in April, steamed to preserve their freshness, and refined to obtain the purest "tencha." Finally, these leaves are slowly ground in granite stone mills, where each 40 grams of matcha requires a full hour of grinding, ensuring its unique color, aroma, and flavor.
Preparation : Start by sifting 1-2 grams of matcha (approximately one teaspoon) into a bowl to prevent lumps. Then, add 70-100 ml of hot water at 80°C (176°F), avoiding boiling to preserve the flavor. Using a bamboo whisk (chasen), mix in quick, "M" or "W" motions until you get a fine, even foam on the surface. Add more water or milk to taste.
